6 Halibut steaks
1 tbsp olive oil
1 lemon (juiced)
salt and pepper
Tomato Salad:
6 medium summer tomatoes
1/3 cup basil (chopped)
3 tbsp parsley (chopped)
2 garlic cloves (minced)
2 tbsp olive oil
2 tbsp lemon juice
salt and pepper
Place fish in a glass baking dish. Drizzle with oil. Squeeze lemon on fish and salt and pepper liberally. Broil in oven 5 minutes per side or until halibut flakes when tested with a fork. Slice tomatoes in wedges. Toss with remaining ingredients and serve over broiled fish. You can make it in 25 minutes.
