Chicken Pancit Bam-i

This is Violy's simple pancit bam-i recipe. She prepared this one on her grand daughter's birthday. My husband likes it too so I would like to share her recipe with you guys. The quantity of the ingredients is not listed so it's up to you.

vermicelli or bean thread/ bihon or sotanghon
pancit canton or egg noodles
chicken breast
celery
carrots
cabbage
onion, diced
garlic cloves, minced
Salt
soy sauce
1 cup water or chicken broth
shrimp (optional)

1. Soak sotanghon in water after cutting it in half with scissors. While soaking, saute garlic and onion on a heated skillet with oil.
2. Add chicken breast, soy sauce, salt and water/broth. Let it boil and simmer till meat is cooked.
3. Add celery and carrots. Stir and let it boil again.
4. Add the noodles/canton and sotanghon. Stir. If necessary, add more soy sauce and pepper to taste.
5. Add cabbage. Stir and cook for about a minute or til heated through. Serve hot.
