Pico de Gallo


This is used to season your family meals or serve with tortilla chips. I like this one with chips especially if it is so spicy! This recipe will make 6 servings and it is 1/2 cup per serving. You can prepare this one in 20 minutes. Easy and tasty! This is a healthy recipe brought to you by Champions for Change, Network for Healthy California.

1lb ripe tomatoes (about 2 medium tomatoes), chopped
1 1/2 cups chopped onion
1/3 cup chopped fresh cilantro
3 jalapeno peppers, seeds removed and chopped
2 tbsp lime juice
2 cloves garlic, minced
1/4 tsp salt

Combine all ingredients in a medium bowl.

Serve or cover and refrigerate for up to 3 days.
