Menudo

Menudo is our term for meat stew and it is one of our favorite Filipino dishes. This tastes good so I recommend you to try this recipe. Instead of using tomato sauce and other seasoning, I used Philippine's Mama Sita's Menudo/Afritada mix. It has the goodness of tomatoes, garlic and onions that serve as a base for menudo. This is also used for afritada and it tastes good as well.You can find my Afritada recipes here in my kitchen too. I have a recipe that uses this mix and another one that uses tomato sauce and other seasoning. By the way, I didn't use beef liver.


1 pouch (30 g)Mama Sita's Meat Stew (Menudo/Afritada)Mix
.77 lb (350 g) diced beef
.33 lb (150 g) diced beef liver
1/2 cup (70 g) diced potatoes
1/2 cup (70 g) diced carrots
2 pcs (80 g) diced bell pepper
1/2 cup (35 g) raisins
1/3 cup (60 g) cooked garbanzos
1 cup (250 ml) water
2 tbsps (30 ml) cooking oil

In a bowl, dissolve the Mama Sita's Mix in water.

Fry potatoes and carrots in hot oil and set aside. In the same pan, stir-fry meat until golden brown.

Pour in dissolved mix. Cover and simmer until meat is tender. Add hot water, as needed.

Add fried potatoes and carrots, then the rest of the ingredients. Simmer for 2 minutes. Serve hot.
