Deviled Egg Potato Salad

Deviled Egg Potato Salad is my husband's another favorite. I like this one too especially with fried chicken. This is good once in a while. I would like to make one this thanksgiving. By the way, the recipe is similar to my quick and easy potato salad only that this has eggs. So if you have noticed that your bag of potatoes has been kept for a long time already, it is time to cook them. Sometimes, I forget to cook the remaining potatoes in a bag. Making potato salad gets rid of them instead of letting it go bad and be wasted. This recipe from CDKitchen for Deviled Egg Potato Salad serves/makes 10.

Ingredients:
***EGGS***
9 hard boiled eggs, peeled
1 teaspoon pickles, minced
1 teaspoon mustard
1 tablespoon mayonnaise
1 dash salt

***POTATO SALAD***
1/2 cup chopped onions
1/4 cup shredded pimentos
1/4 cup shredded green pepper
1/2 cup mustard
1 tablespoon salt
6 cups boiled potatoes, cubed
1/2 cup shredded dill pickles
1/4 cup shredded celery
1 cup mayonnaise
1 tablespoon paprika

Directions:

Cut 6 boiled eggs in half; remove yolk. Place yolks in bowl and mix with pickles, mustard, mayonnaise, and salt; stuff eggs with the yolk mixture. Set eggs aside. Mix potatoes with remaining ingredients. Add eggs (flaked with fork) last. Top with paprika and arrange deviled eggs around top of salad for decorative look.
