Chicken Macaroni Salad

This chicken macaroni salad is so good. You should try it and serve it on your holiday dinner table. My friend Grace made this and she brought it to our Christmas party. I liked it that I even brought some home. My husband liked it so I would try this for our Noche Buena (midnight of December 24th).

1 lb macaroni noodles
3 pieces fresh carrots
1 big chicken breast
500 ml mayonnaise
1 (836 g) can pineapple chunks
1 big white onion, finely chopped
1/2 cup sweet pickle relish
3 hardboiled egg, diced
1 cup cheddar cheese cube
1/2 cup raisins

Directions
Cook macaroni noodles according to package cooking instructions.
In a pot, boil carrots in water for 15 to 20 minutes or until cooked.
Drain carrots and let cool. Peal skin then dice.
Boil chicken breast in water with salt. Drain chicken breast, then shred in 1 inch lengths.
Drain pineapple chunks or tidbits.
Combine all ingredients while adding salt and pepper, to taste.
Refrigerate, then serve.
