Sardines and Bean Thread

This is one of my favorite Filipino dishes that Mom used to prepare. Since a can of sardines (tinapa) was cheaper we always had this before aside from frying the sardines with eggs and onions. Actually, the sardines were cooked with "misua" or "odong." Misua is similar to bean threads but softer. Odong is yellow in color and just like the chow mein noodle but thinner. Since I can't find any misua or odong here, I used bean thread and it tasted the same. Felt like I was eating my Mom's cooking. I made it during my birthday celebration at a friend's house. We always love to have Filipino dishes every occasion.

Nanay was enjoying it (A friend's mother)
1 can sardines (6 0z or more)
4 oz bean thread (about 3 small bundles), soaked in lukewarm water (15 min)
1 medium onion, chopped
1 medium tomatoes
3 cloves garlic
1 tbsp cooking oil
1 red pepper, jullienned

salt and pepper
1 quart water(4 cups)
This is easy to cook. Saute garlic first on cooking oil then add onion, red pepper and tomatoes. Stir and cooked until vegetables are tender-crisp. Add the sardines and stir. Heat for 1-2 minutes. Then add water, add more or less if necessary. Bring to a boil. Add bean thread (drained) and cooked for a few minutes till tender. Add salt and pepper to taste. Serve hot with rice.

Now I have a whole bunch of blog sites with Filipino recipes to look at. I lovee to cook, but have few resources here for recipes overseas.... Now, the internet makes it possible... Salamat.
