Lumpia Shanghai Filling

This is my lumpia shanghai filling recipe. I didn't have any lumpia or egg roll wrapper so I just ate it with cooked rice. This was an easy dish to cook since I used a lumpia shanghai mix by Mama Sita which I bought from the Filipino store. Though it took me a while to prepare the ingredients since I didn't use a slicer for the vegetables. The veges were diced well.

1 lb ground beef
2 pcs potatoes
2 pcs sayote
2 carrots
1 pack Mama Sita's lumpia shanghai mix
salt and pepper (optional)
soy sauce (optional)

In a pan or skillet, cook the ground beef till no pink remains (medium heat). Add the vegetables and cover pan. Stir occasionally. When veges are tender, add the lumpia shanghai mix. Simmer for a few minutes while stirring occasionally. You may add salt and pepper or soy sauce if you want it salty. Serve or wrap with egg roll wrapper and fry.
