This is a quick but tasty chicken soup. When making chicken soup, I still wish to have fresh chicken meat like in Philippines. We make a pot of soup with a whole native chicken in it. So tasty and delicious. Though this one is quite different from the one I got used with, this soup is still yummy especially when served hot and eaten with rice.
6 pieces of chicken parts (breasts/thighs/wings etc)
1 chicken bouillon cube
2-3 pcs potatoes, cubed
3-4 cups of water
greens (spinach,malunggay,kale,bokchoy etc)
Boil chicken meat till half tender. Discard water. In a pot, add water, potatoes and chicken parts. Bring to a boil. Add bouillon cube and black pepper if desired when potatoes are tender. Boil for a few minutes then add greens when it's done. Let the greens be cooked without fire. Enjoy your chicken soup.
