Ube Cake

Another cake created by Olga and her Nanay, UBE cake! This unique kakanin/sweets was really good. Olga and Nanay make pretty good Filipino desserts/delicacies. So every gathering that we have, especially birthdays, we just request them to make a unique cake. This time around, they made a cake out of Ube/Purple Yam. We call it Halayang Ube or Purple Yam Jam. Below is the recipe I got from filipinofoodrecipes.com:

1 kilo ube yam root

1 can (14 ounces) evaporated milk

2 cans (12 ounces) condensed milk

1/2 cup butter or margarine

1/2 teaspoon of vanilla (optional)


On a pot, boil the unpeeled ube yam in water and simmer for 30 minutes. Drain and let cool.

Peel and finely grate the ube yam.

Heat a big wok in medium heat.

Melt butter or margarine, add the condensed milk and vanilla flavoring. Mix well.

Add the 1 kilo grated ube yam,

Adjust the heat to low

Keep on mixing the ingredients for about 30 minutes or until sticky and a bit dry (but still moist).

Add the evaporated milk and continue to mix for another 15 minutes.

Let cool and place on a large platter.

Refrigerate before serving the halayang ube.

Tips: You may spread additional butter or margarine on top of the jam before serving.

For the sweet toothed, sprinkle a little sugar on top of the jam after placing on the large platter.

Instead of manually grating the ube, you may cut it in cubes and use a blender to powderize the ube.

The medical field now is in demand. You can get a job easily compared to other careers. Though competition is evident, we just need to study hard and get the job we want. I like to wear medical scrubs in the future. So as for now, I will just entertain myself by looking around, browsing sites where I can find scrubs for my friends.

Meal for Today

Hubby got a good deal of chicken parts at Albertson's so we had plenty of it for about a couple of weeks. I made chicken adobo with it and I also baked some for hubby and son to eat. Hubby loves my baked chicken wings. We also like fried chicken wings but we seldom fry for healthy reasons. Baking is healthier and less work. So I baked some wings with my secret recipe: it's just seasoned salt and pepper, lots of it! I baked it at 400deg for 45-an hour minutes. It came out so crispy and juicy. I then prepared sides, boiled sweet corn in the cob and Spanish rice. The latter came in a pack and easy to cook. We had a great dinner then and a cheap one!

Shrimp Feast at Red Lobster

Have you heard or tried already Red Lobster's shrimp feast deal? It was a very good deal! I tried it when I was there with friends. It was a birthday dinner and the celebrant treated us. We had stuffed mushrooms for the appetizer and it was good too. It was only me who tried the new deal they had, a full-course meal for $15.00 only. I had Caesar salad, England Clam Chowder for the soup, the grilled shrimp and habanero coconut shrimp for the main entree! I was so full already that I got to take home the shrimp. It has coleslaw and rice pilaf. It was really good. I had a feast! I finished my meal with a serving of a brownie for dessert. One of their best!

Biko Cake

This is our new cake. Instead of the usual cake that we see every birthday, my friends and I have a very creative cake for the candles to be wished and blown. It's a Filipino kakanin or delicacy made of sticky rice and brown sugar. We call it biko or sweet rice. Our friend Olga and her mother always prepare this Filipino cake. She cut some sliced bread for the letters and added a bit of cake decorations. Isn't it pretty? For the biko recipe, you can search my site for it. What a very nice, unique and yummy cake to serve!
