Breakfast Potatoes with Spinach


This is one of hubby's favorite breakfast. It may take a bit while peeling and cutting the ingredients but this dish is really good for breakfast. I prefer this one over hash browns. Packed with protein, vitamins and nutrients, this is a really good food to start your day.

2 Potatoes, peeled and cubed
1 Onion, sliced
2-3 Tomatoes, sliced
3-4 Eggs, beaten
1 1/2 Cups Ham, cubed
2-3 Cups Spinach
1 Cup Mozarella Cheese, grated or sliced
2-3 Tbsp Olive Oil
Salt and Pepper to taste

Saute' onion and tomatoes on heated olive oil, medium heat. When tender-crisp, stir in potatoes and cover. Cook for 5-7 min stirring occasionally. Add ham, salt and pepper. I don't add salt with my dishes. If I do, I use pink salt. Stir in eggs and cook for a few minutes. Add spinach and cover. Stir and add cheese on top and you're done.  Cover and serve when cheese is melted.
