Philippine-Style Barbeque



I was using Mama Sita's Barbeque Marinade Mix. It is a special blend of Asian spices based on our famous recipe comes together for a spicier version of Philippine-style BBQ. Its ingredients are mainly sugar cane, garlic powder, caramel color, salt and spices. You can buy it in filipino stores available in your area. Try it, easy and tastes good with pork. Hubby loves it!

1 pouch Mama Sita's BBQ Marinade Mix

1.1 lb meat cutlets (you can try chicken meat too)

10 pcs bbq sticks or metal skewers


1. In a bowl, sprinkle 1 pouch Mama Sita's BBQ Marinade Mix over meat.

2. Mix well. Marinate for at least 1 hour. I did mine overnight.

3. Thread meat onto skewers.

4. Grill or pan fry in little oil until done.

Shrimp Vegetable Stir-Fry (Low Fat)

This colorful, fresh-tasting stir-fry doesn't take long to prepare and cook. It uses less fat, sugar or salt and includes Nutritional Analysis and Diabetic Exchanges. Try it too :) From Taste of Home Recipe Book.

Ingredients:

1/3 cup reduced-fat Italian salad dressing

1 tablespoon reduced-sodium soy sauce

1/2 teaspoon ground ginger

1 medium carrot, julienned

3/4 cup fresh snow peas

1 small zucchini, julienned

1 small red onion, halved and thinly sliced

1/2 cup sliced fresh mushrooms

1/2 medium sweet yellow pepper, julieneed

1/2 medium sweet red pepper, julienned

1 pound uncooked medium shrimp, peeled and deveined

3 cups hot cooked rice


Directions:
In a small bowl, combine the salad dressing, soy sauce and ginger; set aside 2 tablespoons. In a large skillet or wok, cook and stir carrot in remaining dressing mixture over medium heat for 5 minutes. Stir in the remaining vegetables. Cook and stir for 5-7 minutes or until crisp-tender. Remove vegetables with a slotted spoon and keep warm. In the same skillet, add shrimp and reserved dressing mixture. Cook and stir over medium heat until shrimp turn pink. Return vegetables to pan; heat through. Serve with rice. Yield: 4 servings.

Fruit 'N' Pork Stir-Fry


From my recipe book: Wok Cuisine-Oriental to American of Better Homes and Gardens. I like its sweet taste. Hubby likes it too... Recipe below.

Fresh gingerroot, a staple in Chinese kitchens, is available in most supermarkets. But if you can't find it, just substitute 1/4 tsp ground ginger for the gingerroot in this sauce. I didn't have mandarin and almonds intead I had pecans.
1 lb lean boneless pork
1 8-ounce can pineapple chunks (juice pack)
1/2 tsp finely shredded orange peel
1/3 cup orange juice
2 tbsp soy sauce
1 tbsp cornstarch
1 tbsp cooking oil
1 tsp grated gingerroot
1 medium apple, cored and coarsely chopped (1 cup)
1 11-ounce can mandarin orange sections, drained
1/4 cup sliced almonds, toasted
2 2/3 cups hot cooked couscous or 3 cups hot cooked rice

*Trim fat from pork. Partially freeze pork. Thinly slice across the grain into bite-size strips. Drain Pineapple, reserving juice. If necessary, add enough water to the juice to make 1/3 cup liquid. For sauce, stir together the reserved pineapple juice, orange peel and juice, soy sauce, and cornstarch. Set Aside.

*Pour oil into a wok or large skillet. (Add more oil as necessary during cooking.) Preheat over medium-high heat. Stir-fry gingerroot in hot oil for 15 seconds. Add half of the pork to the hot wok. Stir-fry for 2 to 3 minutes or till no pink remains. Remove. Repeat with the remaining pork. Return all pork to the wok. Push pork from the center. Stir sauce. Add sauce to the center. Cook and stir till thickened and bubbly. Add pineapple and apple. Stir all ingredients to coat with sauce. Cover; cook for 2 minutes. Stir in mandarin oranges. Sprinkle almonds atop. Serve over couscous or rice. Serves 4.

Chili's Steak Fajitas



I don't like much mexican food but I like tacos in soft shell. I tried fajitas and it's ok. For those who love fajitas try this Chili's Steak Fajitas recipe:


Mix together in a bowl:
1 cup soy sauce
1/4 cup honey
1 tablespoon Worcestershire sauce
1 teaspoons minced garlic
1 teaspoon ground ginger
1 cup water

In an appropriate size dish, place a:
2 lb. sirloin or flank steak

Pour sauce (reserve 1/4 cup) over steak.
Cover, and allow to marinate overnight.
Drain meat and slice into thin strips. Heat skillet over medium high.
Add drained meat and:
1 red bell pepper, cut in thin strips
1 green bell pepper, cut in thin strips
1 onion, thinly sliced

Stir−fry just until meat is done, adding reserved
marinade as needed to prevent sticking.
Serve with warmed flour tortillas.

Jack−In−The−Box Tacos

I only tried their tacos once (2 for 99c). It was ok. Below is the recipe:


1 Pound Ground beef
1/3 Cup Refried beans
1/4 Teaspoon Salt
2 Tablespoons Chili powder
1/4 Cup Ortega Mild Taco Sauce
12 Soft Corn Tortillas
3 Cups Cooking oil
6 Slices American cheese (each cut in half)
1 Head Lettuce, chopped fine


Slowly brown the beef over low heat, using a wooden spoon to chop
and stir the meat, keeping it very fine and smooth. When the beef is
brown drain the fat. Add the refried beans and use the wooden spoon
to smash the whole beans into the mixture creating a smooth texture.
Add the salt, Chili powder, and Taco Sauce to the mixture.
Remove from the heat.


In another skillet heat 1/4 inch of oil until hot. Test with a
small piece of tortilla − it should bubble when dropped into the oil.
Spread 1/2 of the beef mixture on the center of each corn tortilla.
Fold the tortillas over and press so that the beef fillng acts as an
adhesive and holds the sides together.


Drop each taco into the pan of hot oil and fry on both sides until
crispy. When cooked, remove the tacos from the oil and place them on a
rack or some paper towels until they are a little cooler.


Pry open slightly and add 1/2 slice American cheese and some lettuce.
Top with additional Taco Sauce to taste.

Emeril's Creole Seasoning


For those who like creole seasoning like me, here's a recipe for u guys:

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly.

Panda Express Orange Chicken



Aside from Bamboo Cafe, we also tried Panda Express. Their chiness food is good too but we just like Bamboo Cafe since it's closer to our office and we got used to its taste. Below is the recipe for Panda express Orange Chicken.


Ingredients:

2 lbs. boneless chicken pieces, skinned
1 egg
1 1/2 teas. salt
white pepper
oil (for frying)
1/2 cup plus 1 Tbl. cornstarch
1/4 cup flour
1 Tbl. minced ginger root
1 teas. minced garlic
dash crushed hot red chiles
1/4 cup chopped green onions
1 Tbl. rice wine
1/4 cup water
1/2 to 1 teas. sesame oil

ORANGE SAUCE FOR STIR FRY:
2 teas. Minced zest and
1/4 c Juice from
1 lg Orange
1/2 teas. Sugar
2 Tbl. Chicken stock
1 Tbl. Light soy sauce

Combine all ingredients in small bowl and set aside.

Cut chicken pieces in 2" squares and place in large bowl. Stir in egg,
salt, pepper, and 1 T oil and mix well. Stir cornstarch and flour
together. Add chicken pieces, stirring to coat.

Heat oil for deep−frying in wok or deep−fryer to 375. Add chicken pieces,
a small batch at time, and fry 3 to 4 minutes or until golden and crisp.
(Do not overcook or chicken will be tough.) Remove chicken from oil with
slotted spoon and drain on paper towels. Set aside.

Clean wok and heat 15 seconds over high heat. Add 1 T oil. Add ginger
and garlic and stir−fry until fragrant. Add and stir−fry crushed chiles
and green onions. Add rice wine and stir 3 seconds. Add Orange Sauce
and bring to boil. Add cooked chicken, stirring until well mixed.

Stir water into remaining 1 T cornstarch until smooth.
Add to chicken and heat until sauce is thick. Stir in 1 teas. sesame oil.

Serve at once.

Ice Cream Sandwiches

Ice cream tastes good but watch out for your calorie intake. It has cholesterol and fat. That's one of the causes why I gained a lot of weight cos for a year and almost a half, hubby tempted me to eat ice cream for dessert. Every night before going to bed, he always handed me a cup or two of it, and sometimes with a slice of cake... We love the ice cream sandwiches too. Below is the recipe:

1/2 cup butter
1/2 cup semi−sweet chocolate chips
1/3 cup sugar
1 egg
1 tsp. vanilla
3/4 cup flour
2 tbls. cocoa powder
1/2 tsp. baking powder
3 cups vanilla ice cream, slightly softened

Preheat oven to 325 degrees. Line 10x15 cookie sheet with wax paper
& lightly oil paper. Melt butter and choc. chips, stir and allow to cool.

Beat together sugar & egg till pale & creamy. Beat in melted choc. and
vanilla. Add flour, cocoa, and baking powder. Continue beating until
incorporated. Transfer batter to pan and spread evenly to edges.

Bake 15 min., then remove from oven. Cool 10 min. and invert onto
cutting board. Carefully remove wax paper and, using sharp unserrated
knife, cut in half lengthwise. When completely cool, spread ice−cream
over one half of the chocolate biscuit evenly. Top with second wafer.

Wrap in plastic wrap and freeze for at least 4 hr. Cut into 8 slices.

Birthday Cake

It was Frank's birthday and I baked him a simple vanilla birthday cake. This comes in package so it's quick and simple. I really love Betty Crocker's cake in packages. Have you tried it already? Below was the food I prepared for him and me (just the two of us)...I made a lot just like how we filipinos prepare for a birthday. Simple food but yummy!
Grilled chicken strips, cucumber salad, fresh vegetables, gelatin, cake and ice cream, fruits, maja blanca,spaghetti, pork stew, wine and more

Kahlua



This is our favorite drink. Hubby and I love this. We had a bottle of this and hubby just added half and half cream to make it creamy. But below is a simple recipe for all of us. If ever we run out of a bottle, we can easily follow this recipe. I have this recipe in my recipe book, "The Good Times"




Ingredients:



1 qt water
2 1/2 cups Sugar
3 tablespoons Instant coffee
1 tablespoon Vanilla
2 1/2 cups Vodka


Bring water, sugar and coffee to a boil in a saucepan.
Simmer VERY slowly for 3 hours. Mixture will be very dark
and syrupy. Cool. Add vanilla and vodka. Makes 7 cups.

Italian Sausage


I love sausage specially if it's grilled. Hubby likes it with spaghetti too. Below is the recipe if you wanna make an italian sausage from scratch. I like it hot and spicy!
Ingredients:


6 pounds meat (5 pork, 1 beef)
4 teaspoons of salt
1/2 oz fennel seed (or to taste)
1/2 oz crushed red pepper (or to taste)
1 Tablespoon Paprika
1/2 cup water


1. Remove the pork from the bone and cut into 1 inch cubes.
Cut beef into cubes. Toss meat with seasonings and 1/2 cup
water. Store in refrigerator over night and grind the next day.
2. Grind the meat twice with a course blade and make it into large
patties (1/2 cup measure of sausage), freeze them between
double layer sheets of wax paper on a cookie sheet and then
put them in plastic bags.
3. Make hot sausage sandwiches with fried onions and green
peppers on a hoagie bun. Grill sausage either in a frying pan,
or barbecue.

Applebee's Baby Back Ribs

It was Valentine's day and we had dinner at Applebee's. Boy there were a lot of people waiting outside and for sure, a lot of people were dining in other resaturants too. We got lucky we had a table right away after waiting for a few minutes while sipping our margarita. Then we ordered their Baby Back Ribs and oh it tasted good! I recommend you try it. Here's a recipe for you guys. I didn't take a picture of it so just imagine the ribs ok ;)

Ingredients:

3 racks (about 1 lb. each) pork baby back ribs, each cut in half

Barbecue sauce:
1 cup ketchup
1/4 cup apple cider vinager
3 tablespoons dark brown sugar
3 tablespoons worcestershire sauce
1 teaspoon liquid smoke
1/2 teaspoon salt

1. Put ribs in a large pot with enough water to cover them. Bring water to a
boil, reduce heat, cover and simmer 1 hour or until ribs are fork tender.

2. Mix all sauce ingrediants together in a medium sauce pan and bring to a
boil, reduce heat and simmer uncovered, stirring often, for 30 minutes or
until slightly thickened.

3.Heat broiler. Line broiler with foil for easy cleanup. Place ribs, meat
side down, on broiler pan, brush with 1/2 the sauce and broil 4−5 inches
from heat source for 6 to 7 minutes. turn ribs over, brush with remaining
sauce and broil 6 to 7 minutes longer or until edges are slightly charred.

Broccoli with Orange Sauce


I was looking for a quick and simple recipe for broccoli and I was glad I found this side dish recipe from my recipe book, A Taste of Home. It's really easy to prepare and I like the taste ;)
Since I used fresh broccoli, I boiled it for 2 minutes with a little bit of water in a pan using the stove top.


Ingredients:

2 packages (10 ounce each) frozen broccoli spears
1/4 cup butter, cubed
1 teaspoon cornstarch
1/2 cup orange juice
1 tablespoon grated orange peel


Directions:
Cook broccoli according to package directions. Meanwhile, in a small saucepan, melt butter. Whisk in cornstarch until smooth. Gradually stir in orange juice; add orange peel. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain broccoli; drizzle with sauce. Yield: 4 servings.

Plantains

The plantain is a crop in the genus Musa and is generally used for cooking, in contrast to the soft, sweet banana (which is sometimes called the dessert banana). wikipedia
This reminds me of my late grandma's bananas. Everytime we visit the province, we always had cooked bananas or plantains specially when we went to my Aunt's place by the sea. We eat this with salted anchovies/Bagoong or soy sauce with oil. Sometimes just pork fat and salt. Oh I miss it!

This was the first time I cooked plantains and it was in the office. I had it with plums for lunch. It was sweet and i like it. I first tried eating this with friends at Rose's house. I liked it cos I missed it so much. That's why I bought 2 big pieces and tried it. To cook it, you may use the stove top. Add a bit of water and let boil. Or you may use the microwave just like what I did. I added a small amount of water and heated it for 5 minutes per plantain. Try it!

Chicken Afritada

Fried Shrimp, Chicken Adobo, Chicken Afritada and sliced ripe Mangoes

I got this recipe from my good friend, Mary hausmann, who cooked the food on the above pic. I haven't tried cooking chicken afritada yet but I have tried eating it using the same recipe. It tastes good and for sure hubby would love it. You might like it too.
Ingredients:

1 kilo chicken, cut into pieces
3 pieces potatoes, peeled and halved
carrots & green peas
1 red onion, diced
1 clove garlic, minced
1 green bell pepper, sliced into strips
1 red bell pepper, sliced into strips
2 cups pork or chicken stock (broth)
1 cup tomato sauce
2 tablespoons of patis or soy sauce (fish sauce)
3 tablespoons of cooking oil

Chicken Afritada Cooking Instructions:

In a cooking pot or wok, heat oil.

Sauté garlic and onions.

Add chicken and slightly brown.

Pour the tomato sauce and stock. Bring to a boil and allow to simmer for 20 minutes or until the chicken is almost cooked.

Add potatoes, carrots & green peas and continue to cook for 10 minutes or until cooked.

Add the green and red bell peppers, simmer for an additional minute or two.

Salt and pepper to taste

Shrimp With Vegetable


I like Bamboo Cafe's Shrimp with Vegetable that I craved for it last night. I wanna try my own cooking so late at night, I cooked it. I searched online for the recipe and found one @ cooks.com but I edited most of it. Below is the modified recipe I made for you to enjoy the good taste too. You may check the original recipe too, but i think, you'll like mine best ;)

Ingredients:

2 tsp. cornstarch
1-1/2 c. water
Vegetable cooking spray (optional)
2 tsp. sesame or vegetable oil
1 lb. raw shrimp
1 tsp. minced garlic
1 tbsp. minced peeled ginger root
1 pc. yellow squash, sliced and halved
1 pc. sliced zucchini
half small pack of mushrooms, sliced
half of 1 count fresh broccoli, chopped
1/4 tsp. chicken-flavored bouillon granules or 1/2 pc chicken-flavored bouillon cube
1 tsp. reduced sodium soy sauce
1 tbsp. minced fresh basil (optional)
crab meat (optional)
Cooking Instructions:

Peel and devein shrimp. Combine cornstarch with water and set aside. Coat a large skillet or wok with cooking spray; add oil and place over high heat until hot. Add ginger root and garlic; stir fry till golden brown. Add shrimp and crab meat; stir fry 2 minutes. Set aside.

Stir fry raw vegetables for 2 minutes. Add cornstarch mixture, bouillon cube, and soy sauce; bring to boil and cook 1 minute until thickened, stirring constantly. Return cooked shrimp and crab meat to pan and stir together. Serve hot over cooked rice.

Simple Meals


Com on let's eat! On the picture above, the shrimp was just boiled with a seasoning for shrimp. I cooked macaroni and cheese, my favorite, and the steak. Potatoes were cooked using the microwave for 5 minutes (2 pieces). The corn was boiled/steamed with a little bit of salt for at least 30 min.

Here we had grilled chicken thighs, steamed artichoke, and the vanilla pudding on vanilla cookies which was chilled in the fridge for a few hours for dessert. Just a simple dinner for the two of us. We were hungry from work and we didn't have time to prepare dinner. A simple and quick way is what we can have always when we are both in the office the whole day...

Tropical Coconut Dessert

My friend Myrna, gave this to me when I was sick. It was so nice of her. She bought this one from one of the stores here in CA. Can't remember, but I think it was at Costco. You must try this guys, it really tastes good. Tastes like the one we have in Philippines. I miss eating young coconut meat. I remember every morning my brother will climb our tree and get young coconuts with fresh buko (coco )juice and drink it. The meat is sweet and tastes good. I'm drooling now. This tastes good with other fruits. We call it buko salad...creamy and yummy!

Pork With Cabbage and Potatoes

I'm not sure what it is called but this just like the stew. I just cooked the pork meat with water, cabbage and potatoes. I like the taste of the soup. I could have added carrots if I had at that time. If you wanna try it, below are the ingredients:
a lb of Pork Meat
half small cabbage
2 pcs potatoes
tomatoes
onion
garlic
green pepper
2 cups water(depends on you)
salt and pepper to taste
I saute the garlic, tomatoes, pepper and onion on medium heat. I added the pork meat and water. Cook the meat until tender then add the sliced potatoes then add salt and pepper to taste. Add the cabbage when the potatoes are cooked. Boil for a few minutes then serve while it's hot.

Valentine Cake


It's easy to bake cake if you don't have to start from scratch. Using Betty Crocker's cake in a package is the quickest way for me to prepare a cake. I don't have to measure and mix the yeast flour and etc. I don't have to spend money buying a pack of flour and just waste the extra. We had wasted a lot already before and since I've tried this cake, baking for me is so easy. Above is a picture of Betty's Devil Cake (for Valentine's day). I made a heart-sahaped cake for hubby. Shaping it is easy.

Then I added chocolate frosting and the confetti sprinkles. I added some marshmallows on its sides but it wasn't properly placed lol, was soo sleepy when I baked this (past midnight!) Obviously, it's not presentable. I promised hubby I'll make it pretty next time ;) By the way, you may not include egg yolks to lessen the cholesterol content. So try baking now and make your own design. Believe me it's easy ;)

Hotdog Sandwiches


January 1, 2008-We were at Pasadena, CA witnessing the beautiful Rose Parade. It is done annually and this year, we were lucky to see it. We went to Disneyland a day before that. We spent our New Year celebration there and gosh! There were a lot of people. We waited on a very long line just to try the newly-opened submarine ride of Disney's Finding Nemo. I loved it! Not only with that ride, there were also longer lines with the other rides like Splash Mountains, Space Mountains and more. And the midnight party was great! Great music and great crowd :)

At the main street of Pasadena, there was a family selling hotdog sandwiches. It smelled good that I was tempted to try one. Frank also bought one for himself. After the parade, lots of people from different cities walked out from the venue. Like us, they also bought hotdog sandwiches on their way home. The parade lasted long and made us so hungry. And that sandwich really tasted good. I even tried making it when we arrived home. Its ingredients were mainly green bell pepper, onions, hotdog , hotdog buns and the dressing, ketchup, mustard and mayonnaise. The pepper and onions were sauted on oil. The hotdogs were fried and the buns were heated on the hand-made pan. It was quick and with a squeeze of mayonnaise, ketchup and mustard, the sandwiches were ready to go...and opppps, we didn't forget the jalapenos of course :) the jalapenos were fried too :) tasted good! I'm drooling...fattening huh but it's good if you'll only eat once in a while. I haven't tried eating hotdog sandwiches like that since then...I'll try again next time.

Kare-Kare /Philippine Stew

Kare-kare is a Philippine stew. It is made from peanut sauce with a variety of vegetables, stewed oxtail, beef, and occasionally offal or tripe. Meat variants may include goat meat or (rarely) chicken. It is often eaten with bagoong (shrimp paste), sometimes spiced with chili, and sprinkled with calamansi lime juice. Any Filipino fiesta, particularly in the Tagalog region, is not complete without kare-kare. In some Filipino-American versions of the dish, oxtail is exclusively used as the meat. wikipedia

Estimated cooking time: 2 hours

Ingredients:
1/2 kilo beef (round or sirloin cut) cut into cubes (for a more traditional kare kare, use cleaned beef tripe instead of beef)
1/2 kilo oxtail, cut 2 inch long
3 cups of peanut butter
1/4 cup grounded toasted rice
1/2 cup cooked bagoong alamang (anchovies)
2 pieces onions, diced
2 heads of garlic, minced
4 tablespoons atsuete oil
4 pieces eggplant, sliced 1 inch thick
1 bundle Pechay (Bok choy) cut into 2 pieces
1 bundle of sitaw (string beans) cut to 2" long
1 banana bud, cut similar to eggplant slices, blanch in boiling water
1/2 cup oil
8 cups of water
Salt to taste

Cooking Instructions:

In a stock pot, boil beef and oxtails in water for an hour or until cooked. Strain and keep the stock.

In a big pan or wok, heat oil and atsuete oil.

Sauté garlic, onions until golden brown, then add the stock, toasted rice, beef, oxtail and peanut butter. Bring to a boil and simmer for 15 minutes. Salt to taste.

Add the eggplant, string beans, pechay and banana bud. Cook the vegetables for a few minutes - Do not overcook the vegetables.

Serve with bagoong on the side and hot plain rice.

Lumpia Shanghai


Below is the original recipe of the lumpia shanghai from recipe.com. But what i did, I didn't use ground pork and used ground beef instead, I omitted the shrimp, waterchestnuts, scallion,egg and added finely chopped carrots. I ended up with a very simple recipe. Grace, a friend of mine told me too about this recipe. I just put a lot of pepper and it tasted good. Hubby liked it. My friends even liked the taste cos I brought it to a friend's house for her and her family to try. By the way, I cooked the meat first before i wrapped it with egg roll wrappers.

Ingredients:

1/2 Pound Ground Pork
1/2 Pound Shrimp -- finely chopped
1/2 Cup Waterchestnuts -- chopped
2 Large Scallion -- finely chopped
1 Teaspoon Salt
1 Teaspoon Pepper
1 Large Egg
1 Tablespoon Soy Sauce
1 Package Egg Roll Skins
1/2 Cup Oil -- for frying

Combine pork, shrimp, water chestnuts, green onion, egg and soy sauce. Season with salt and pepper. Place a tablespoon of filling on each egg roll wrapper and seal with a few drops of water. Deep fry in the oil for 2 minutes and drain on paper towels. Serve with your favorite dipping sauce. I like sweet chili sauce :)

Fried Lumpia

I modified the recipe from recipe.com:

Ingredients;

1/2 pound ground pork (you may add ground chicken or turkey)

1/4 pound shrimp -- shelled and cut small
1 medium potatoes -- peeled and diced small
1 medium carrots -- peeled and diced small
1/2 pound green beans -- trimmed and cut small
1/8 pound bean sprouts
half small cabbage head -- shredded
2 cloves garlic -- minced
1 medium onion -- diced
15 egg roll wrappers ( you can buy a pack)
salt and pepper
1 cup vegetable oil -- for frying
1 tbsp butter

Instructions:



Brown the ground meat in a pan (no oil). Remove from pan. Brown garlic and onion in butter; add shrimp and salt. When shrimp is pink, add meat and add beans when it's cooked later. When beans are soft, add potatoes and carrots. Cook till tender, then add cabbage and bean sprout last. Cook for 5 minutes. Add salt and pepper to taste. Drain before adding to wrapper. With wrapper corner toward you, place 2 to 3 tablespoons cooked mixture in wrapper. Roll into tight roll and seal end with a water-flour paste. Fry rolls in oil till brown over medium-medium high heat. Drain on paper towels.
Amounts can be adjusted to your tastes. May substitute two 14 oz. cans of French-style beans for the fresh green beans. Potatoes and carrots may be shredded instead of diced. May substitute canned bean sprouts for fresh.

Lumpia Sauce

1 clove garlic -- crushed
1/2 cup brown sugar
1/2 cup soy sauce
1-1/2 cups water
4 tablespoons cornstarch
1/3 cups cold water
1 tablespoon vegetable oil


Mince the garlic and mix the cornstarch into the 1/3 cup water.
Heat the oil in a medium saucepan on medium heat; add garlic and saute until softened. Stir in brown sugar, soy sauce and 1-1/2 cups water. Slowly add cornstarch mixture stirring constantly until thickened.

Makes 4 cups.

Chicken Adobo

Here's a simple chicken adobo recipe from recipe.com. I only added bay leaves.


3 pounds skinless chicken breast
1/4 cup vinegar
1 tablespoon soy sauce
1 head garlic -- crushed
8 whole peppercorns -- crushed

Wash chicken. Cut chicken into serving pieces. Add vinegar to chicken in 4 quart saucepan. Add soy sauce and rest of ingredients. Do not stir chicken until it has started to boil. Cover and simmer chicken till cooked, approximately 30 to 45 minutes. Add water, if necessary. Remove chicken. Fry some garlic in butter. When browned, add chicken without liquid. Fry till browned. Add liquid and simmer for 5 to 10 minutes. Serve hot over rice.

Pork Adobo


I had my own way of cooking the Adobo. I like it dry and tasty :) Check my recipe.

Ingredients:

4 pork chops cut in halves (u may use other parts or use chicken)
1/2 cup vineger
1/4 cup water
1/4 cup soy sauce
crushed peppercorns
crushed cloves of garlic
sliced onions
sliced red bell pepper
bay leaf
1 tbsp oil
a bit of sugar (optional)

Mix all ingredients except oil on a skillet. Simmer it until the meat is cooked for at least 45 min. Stir occasionally. You may also add the red pepper and onions when it is almost done but I like it to be cooked well with the meat so I can eat it :) it's tasty!

When it starts to dry up add the oil. You may also serve it even it isn't dry yet. The sauce is good for your rice. Serve hot with rice and vegetables.

Coconut Milk Shrimp With Carrots And Cabbage

I can't remember the recipe and I was too lazy to browse the net or even scan my recipe books. So i have my own simple coconut shrimp recipe. It tasted good :)
Ingredients:
sliced tomatoes, cloves of garlic (sliced), onion, and red bell pepper
cabbage, carrots, 1 can coconut milk and shrimp (if it's frozen, defrost it by running cold water to it)
oil
salt and pepper to taste
Cooking it is easy, you have to saute the garlic, tomatoes, onions and pepper first on oil.
Add the coconut milk and the carrots. Cook it until tender but don't overcook as well as the coconut milk.


Then add the shrimp and the cabbage. Then add salt and pepper to taste. I used creole seasoning again :)
Let it boil . Shrimp cooks fast, it's not good to overcook it.




Serve hot with plain rice.
