Strawberry-Banana Smoothie

This is my strawberry-banana smoothie. I used a proportioned amount of non-fat yogurt, fat-free milk, strawberries and a banana. It is easy to make. Blend all ingredients and your smoothie is ready for you to sip. I bought a big bag of frozen fruits (peach, grapes, strawberries, melon) last night and made a smoothie this morning. It was sweet and the taste was fruity and delicious.

Today's Meal

Tomorrow is my last day of my diet pills intake (Alli diet pills). In a month, I lost a total of 8 lbs and I am happy about that. Even if I won't take pills anymore, I will stick to my proper diet. I will eat less and maintain my food intake amount. Today I have brocolli in cheese (comes in package and less in fat), baked potato with salt and pepper (no butter) and baked pork chops with shake and bake seasoning (just follow the package instructions in baking). Tasted good!

Big−John's Beans 'n Fixin's

My husband and I love pork and beans. We always eat it with sausage or hotdog, with bread or with steak. I remember back in Philippines, we will eat pork and beans with rice or sometimes with bread alone. I seldom eat a can of it before but when I arrived here, I eat it more often compared before. I like Campbell's Pork and Beans with less fat so with Insider's version of Big−John's Beans 'n Fixin's, the recipe below is pretty good.

Ingredients:
1 16 ounce can Campbell's Pork & Beans

The "Fixin's":
1/2 cup Manwich brand sloppy−joe sauce (Heinz works well too)
1−1/2 Tablespoons Hormel real bacon bits
1/2 Tablespoon sugar
1−1/2 teaspoons molasses
1 teaspoon dried, minced onion
1/8 teaspoon salt
1/8 teaspoon ground mustard
1/16 teaspoon pepper

Combine the ingredients for the Fixin's in a small jar, cover, and
refrigerate at least a 1/2 hour (this allows the flavors to blend).
At "bean" time, empty the can of beans into a small saucepan, and stir in
the pre−made Fixin's. Over low−medium heat, bring the Beans and Fixin's to a
simmer, stirring occasionally. When heated through, serve.

These are Insider's versions of Big Boy's Blue Cheese Dressing and Bob Evan's Colonial Dressing. Use the dressing with your salad and any appetizers. Blue Cheese dressing would be perfect for the fruits and vegetables.

Big Boy's Blue Cheese Dressing

1/2 cup Sour cream
1/2 cup Milk
1 cup Kraft mayo
4 ounces Blue cheese, crumbled
1/8 teaspoon Onion powder

Use electric mixer to combine all ingredients until smooth. Tightly
cover and refrigerate. Use within 10 days.

Bob Evan's Colonial Dressing

1 Cup Water
1/8 Cup Cornstarch
1/2 Cup Vinegar, light or dark
1 Cup Sugar
1 Teaspoon Onion powder
1 Tablespoon Salt
1/4 Cup Butter or margarine
1/2 Teaspoon Pepper
1 Teaspoon Celery salt
1 Tablespoon Celery seed

Put water and cornstarch into blender on high speed for 1 minute or until
smooth. Transfer to a 2 1/2 qt. saucepan. Cook mixture over Medium High
heat, stirring constantly as you begin to add each of the remaining
ingredients, stirring well after each addition. Cook and continue stirring
until it begins to thicken and become quite smooth. Let it cool completely
before pouring into a refrigerator container. Cap tightly.

Black Angus Garlic Cheese Bread, Black Eyed Pea's Cornbread and Bisquick



Below are Insider's versions of the Black Angus Garlic Cheese Bread, Black Eyed Pea's Cornbread and Bisquick. Speaking of cheese bread, we just had this bread for dinner with pizza. It tasted good. I just ate a small piece since I am still on diet. Try the recipes below and for sure, you will like it too!


Black Angus Garlic Cheese Bread
1 loaf french bread
1/2 cup butter
1 cup shredded jack cheese
1 cup shredded asiago cheese
1 cup mayonnaise
1 bunch green onions, chopped
2 cloves garlic, pureed
Split french bread loaf into halves horizontally. Mix butter, cheeses,
mayonnaise, green onions and garlic in a bowl, blending well. Spread the
cut side of bread with spread. Bake at 350 degrees for 7 minutes, then
place under broiler about 3 minutes longer. Cut into slices and serve.



Black Eyed Pea's Cornbread
1 lb. ground beef
1 cup canned black−eyed peas, drained
1 cup onion, chopped
3/4 cup cream−style corn
1 cup cornmeal
1/2 cup flour
1 cup buttermilk
1/4 cup cooking oil
2 eggs, slightly beaten
1 tsp. Salt
1/2 tsp. Baking soda
2 jalapeno peppers, chopped
1 cup Cheddar cheese, grated
Brown meat and drain well. Break into small pieces. Add other ingredients in
order given. Mix well. Place in 13−by−9−by−2 inch pan that has been well
greased. Cook at 350 degrees for 45 minutes, or until done.


Bisquick
8 Cups Flour
1 1/4 Cups Nonfat Dry Milk Powder
1/4 Cup Baking Powder
1 Tablespoon Salt
2 Cups Shortening
Combine flour, milk, baking powder, and salt in a very large bowl.
Cut in shortening until it resembles coarse cornmeal. Store in tightly
closed covered container in a cool place. Makes about 10 cups.

Aside from cooking, I also love to watch sports clips on the Internet since I am 24/7 online. I like watching sports videos too on TV but during working hours, I can only watch online sports videos. Big Boy's Strawberry Pie


I am not really into pies but I do try to have a taste. Hubby and I love pecan pie and that is our favorite. I have tried strawberry pie and it tastes good too. Looking at the picture makes me drool. Below is Insider's version of Big Boy's Strawberry Pie. It surely is delicious. I will try this someday as one of the desserts.

1 cup All Purpose Flour
1/4 tsp. salt
3/4 stick butter
1 1/2 Tbsp. shortening
1/8 cup Ice water

Put flour and salt in the bowl of a food processor. Cut
the butter, and shortening into the flour. Process a
few seconds until the mixture resembles a coarse
meal. Drop by drop add the water, processing briefly.
The whole process should take about 20 to 30
seconds. Wrap and chill for an hour. Remove from
refrigerator, and let stand 15 minutes before rolling.
You can double this up for a top and bottom crust.

Filling:
1 cup Sugar
3 Tbsp. Corn Starch
1 pint Strawberries
1 12 oz. can 7−UP
Whipped cream

In a medium sized sauce pan combine sugar,
cornstarch, and 7−UP until creamy. Cook over a
medium to a medium high heat until the mixture
becomes thick. When this mixture becomes thick, cool
to room temperature, and add a couple of drops of red
food coloring. Wash, and cut strawberries into
quarters, or smaller depending on how large they are.
Sprinkle a teaspoon or two of sugar on the
strawberries, and place them into the shell. Pour the
cooled 7−Up mixture over the strawberries. Allow this
to set for a few minutes. Serve with plenty of Whipped Cream.

Mrs. Fields Carrot Cake

This is different from the carrot cake I used to have back in Philippines. This has walnuts and cinnamon that add flavor and taste to the carrot cake. But I still miss the it. My old neighbor used to bake this every occasion and I have loved it. Here in US, I only had a slice of this twice. Hubby always eat half of my cake too :) But I'll try this Insider's version of Mrs. Fields Carrot Cake someday.


2 1/2 Cup All−purpose flour
2 Tablespoon Baking soda
1/4 Teaspoon Salt
2 Teaspoon Cinnamon
1 Cup Light brown sugar, packed
1 Cup White sugar
1−1/2 Cup Butter, softened
3 Large Eggs
2 Teaspoon Pure vanilla extract
3 Cup Grated carrots
1/2 Cup Crushed pineapple, drained
1 Cup (6−oz.) raisins
1 Cup (4−oz.) chopped walnuts
16 Ounce Cream cheese, softened
1/2 Cup Salted butter, softened
1 Tablespoon Fresh lemon juice (about 1, large lemon)
2 Teaspoon Pure vanilla extract
3 Cup Confectioners' sugar

Preheat oven to 350−degrees. Grease and flour two 9−inch cake pans. In a
large bowl stir together flour, baking soda, salt, cinnamon and sugars. Add
butter, one egg and vanilla; blend with electric mixer on low speed.
Increase speed to medium and beat for 2 minutes. Scrape down sides of bowl.
And remaining eggs, one at a time, beating 30 seconds after each addition.
Add carrots, pineapple, raisins and walnuts. Blend on low until thoroughly
combined. Pour batter into prepared pans and smooth the surface with a
rubber spatula. Bake in center of oven for 60−70 minutes. Toothpick nserted
into center should come out clean. Cool in pans for 10 minutes. Then invert
cakes on rack and cool to room temperature.
TO PREPARE ICING: On a medium
bowl with electic mixer on medium speed, beat cream cheese and butter until
smooth add lemon juice and vanilla; beat until combined. Add sugar
gradually, mixing on low until smooth. TO ICE THE CARROT CAKE: Place one
layer on a cake platter, and with a metal spatula spread icing over the top
to form a thin filling. Place second layer over the first, rounded side up.
Coat the top and sides of the cake evenly with remaining icing. Refrigerate
1 hour to set icing.

Field of Greens

We went to Pismo Beach, CA last Sunday and watched the beautiful sunset. While we were there, we looked for a restaurant by the ocean and we saw one. Their food wasn't bad, I like their salad. The picture above is Pelican's Point Bar and Restaurant's Field of Greens Salad for $6.00. It has teardrop tomatoes, slices of cucumbers, shredded carrots, onions, various greens, nuts and vinaigrette which is perfect for the greens and it really tasted good. I can make my own salad and I will also make my own vinaigrette. It is just a mixture of vinegar or any lime juice with oil with herbs and other ingredients. Try it too.

Marble Cake with Chocolate Frosting


This is the cake I baked on my husband's birthday. I just used a cake mix in a package (You may use Duncan Hines or Betty Crocker cake mix). Just add water, eggs and oil then it will be ready for baking. The instructions on the package is easy so every time I bake a cake, I always use this. It tastes good too and comes in different flavor! This one is marble cake. It has cocoa that creates the marble design. I used chocolate filling and frosting. Try it at home.

Combine all ingredients in a medium bowl.

Picnic Meal

Last Saturday, we were in a company picnic. A lot of families who have workers who work in that company joined and that included my husband's son. So we joined and had fun. On the above picture was our meal. we had bread and butter, greens with vinaigrette (which is a mixture of vinegar and oil, often flavored with herbs, spices, and other ingredients), chili beans and roasted beef with red sauce. It tasted good that I ate the whole meal except the butter, I didn't touch it. I'll post later the recipe for roast beef. It was a simple and healthy meal.

Pico de Gallo


This is used to season your family meals or serve with tortilla chips. I like this one with chips especially if it is so spicy! This recipe will make 6 servings and it is 1/2 cup per serving. You can prepare this one in 20 minutes. Easy and tasty! This is a healthy recipe brought to you by Champions for Change, Network for Healthy California.

1lb ripe tomatoes (about 2 medium tomatoes), chopped
1 1/2 cups chopped onion
1/3 cup chopped fresh cilantro
3 jalapeno peppers, seeds removed and chopped
2 tbsp lime juice
2 cloves garlic, minced
1/4 tsp salt

Combine all ingredients in a medium bowl.

Serve or cover and refrigerate for up to 3 days.

Bennigan's Hot Bacon Dressing



I have never tried this yet but would love to make it. For right now, I'm dieting so I am controlling my fat intake. I minimize myself from eating food with lots of dressing and if possible, it should be light or with less fat. But still, the food that is not really good for us really tastes better! This Hot Bacon Dressing is perfect for your green salads and other food.

2 ounces Bacon grease
1/4 pound Red onion, dice fine
2 cups Water
1/2 cup Honey
1/2 cup Red wine vinegar
2 tablespoons Dijon mustard
1 1/2 tablespoons Cornstarch
1 tablespoon Tabasco (optional)

Place the bacon grease in a saucepan over medium−high heat.
Add the onions and saute until the onions start to blacken. While
the onions are carmelizing, in a mixing bowl place the water,
honey, pepper sauce, and red wine vinegar. Using a wire whisk,
mix the ingredients well.
Add the cornstarch and whisk well. After the onions have
carmelized, add the Dijon mustard to the onions and stir together
with a rubber spatula. Add the water, vinegar, pepper sauce
honey and cornstarch to the mustard and onions and mix.
Continue stirring until mix thickens and comes to a boil. Remove
from heat and store in refigerator until needed. To reheat use a
double boiler.

For people who like broccoli like me, you should try this. I remember I have posted an appetizer like this already but this one is different. It's Top Secret Master's Edition's version of the Bennigan's Broccoli Bites. Enjoy this great tasting vegetable bites.

3 eggs
6oz. shredded monterey jack cheese
6 oz. shredded colby cheese
1− 16 oz. box frozen chopped broccoli, thawed, drained and dried
2 1/2 ozs. bacon pieces
1/2 oz. diced yellow onion
1 oz. all purpose flour
Italian bread crumbs as needed

Drain thawed broccoli thoroughly by pressing through a strainer. Beat eggs
in a mixing bowl with a whisk until well blended. Place all the ingredients
into a plastic container, except the bread crumbs. Stir together with a
spatula until thoroughly combined. Refrigerat mixture for about 1 hour. This
will help to bind the mix making preparation much easier. Heat about 4 cups
oil in a fryer or deep pan for frying at 350F. Set up a shallow pan with
bread crumbs. Scoop about 1/2 oz. portion of the broccoli mixture into the
bread crumbs. Form each portion into a ball and coat it well. Place broccoli
bites into the fry basket or frying pan. Make sure they do not stick
together. Fry for one minute, then remove and place onto a plate lined with
paper towels to absorb excess oil.
Serve with : HONEY MUSTARD DRESSING 3/4
cup sour cream 1/3 cup mayonnaise 1/3 cup dijon mustard 1/3 cup honey 1
Tbsp. + 1 tsp. lemon juice In a mixing bowl, combine sour cream, mayonnaise
and mustard. Blend thoroughly using a whisk. Slowly pour in the honey and
lemon juice, continue mixing until smooth and well combined.

Shrimp/Hipon

I remember one of our Fiestas in Philippines. Shrimp is always a favorite dish to prepare on the table for the visitors. But I would never bother to eat a lot of it instead I will choose the other pork dishes. Especially when our school principal is having a fiesta in his province, there is always a shrimp dish prepared. I regret that I haven't enjoyed much the shrimp back in Philippines and now I miss it. The fiesta is coming up and I am drooling for shrimp. My father cooks delicious shrimp. He just cook it with a bit of water, stir it until it dries and add salt or seasoning. Shrimp cooks in a few minutes and it is not good to over cook it. It tastes so good and sweeter when it is fresh. Hmmm, I better buy a pack later and cook it myself, the way my father cooks it. How I wish there are fresh ones here :(

Bennigan's Onion Soup

If you like onions, you should try this one. One day, I will prepare this one for my hubby since we both like onions. Since I am not into frying this time, I will surely make an onion soup. If you have made lots of it, you can save it and it will still be good up to six months. Just freeze it and heat it when you feel like having a soup again.

1/2 pound Firm white onions −− sliced
1/4 cup Butter
2 tablespoons Corn oil
3 tablespoons Flour
1 quart Chicken broth
1 quart Beef broth
8 slices French bread
Swiss cheese −− shredded
Parmesan −− grated

Saute onions in butter and oil until onions are transparent, but not
well browned. When tender, turn heat to lowest point and sprinkle with
flour, stirring vigorously. Pour into Dutch oven and stir in broths.
Heat thoroughly and divide among 8 oven−proof bowls. Mix equal parts of
cheese to smooth paste and spread over bread. Float a slice of
bread atop each serving. Place all bowls on oven rack 4" from broiler heat
and broil until cheese melts. Serve at once. Leftover soup freezes
well up to 6 months.

Fresh Lumpia


Fresh Lumpia is one of my favorite snacks. I remember Peek N' Berry's fresh lumpia in Iligan City. It tastes good with its sweet starchy sauce. This is different from Lumpia but both are wrapped in a thinner piece of pastry, different in size and tastes differently too. The latter are fried with the lumpia wrappers, while the other one are eaten with fresh lumpia wrappers. The picture above has to be wrapped first before serving. It has a sauce that goes with it. Below is the recipe for the wrapper and the lumpia as well.
Wrappers
2 large eggs
1-1/4 cups water
1/2 cup cornstarch
1/2 cup flour
1/8 teaspoon salt
About 3 tablespoons cooking oil

Filling
1/2 cup julienned onion
1 teaspoon minced garlic
1 boneless, skinless chicken breast half, thinly sliced
1/4 pound medium raw shrimp, shelled, deveined, and halved
1-1/2 cups finely julienned jicama
1/2 small carrot, finely julienned
2 green onions, finely julienned
2 teaspoons oyster-flavored sauce
1 teaspoon Filipino fish sauce (patis)
1/4 teaspoon black pepper
5 tender lettuce leaves
Getting Ready
Prepare wrappers: In a bowl, whisk together eggs, water, cornstarch, flour, and salt until smooth. Strain batter.

Place a nonstick 8-inch omelet pan over medium heat until hot; brush with 1/4 teaspoon oil. Pour 1/4 cup batter into pan; tilt pan so batter covers entire surface. Cook until edge of wrapper is lightly browned and surface looks dry, about 45 seconds. Loosen edge with a spatula, turn wrapper, and cook 10 seconds longer. Turn wrapper out of pan onto a plate. Repeat to use all batter.

Cooking
Prepare filling: Place a wok over high heat until hot. Add 1 tablespoon oil, swirling to coat sides. Add onion and garlic. Stir-fry for 30 seconds. Add chicken and shrimp; stir-fry for 2 minutes. Remove from pan. Heat 1 tablespoon oil. Add jicama and carrot; stir-fry for 1 minute. Add green onions; cook until vegetables are tender crisp, about 2 minutes. Return chicken mixture to pan; add oyster-flavored sauce, fish sauce, and pepper; cook for 1 minute. Cool.

Cut lettuce in half lengthwise. For each lumpia, place a piece of lettuce on wrapper. Spoon about 1/3 cup filling into center of wrapper. Fold bottom third of wrapper over filling, then fold in sides.

Serve with garlic dipping sauce or a mixture of hoisin sauce and soy sauce.

Fried Tilapia

Tilapia was not really my favorite when I was still in Philippines. I didn't like it much because they used to tell me that it came from the canal. It was just a joke that I took seriously and whenever I saw it, I couldn't eat it. I know it came from fresh ponds because at the province I saw a lot of it. It was when we had a clean-up drive as our community project for Rotaract Club when my co-Rotaractor told us a story about Tilapia. We were cleaning the canal at that time and we saw some Tilapias swimming in the dirty water. I always had that in my thoughts then.
When I arrived here in USA, i didn't eat much fish but when I met some Filipino friends, we always have Tilapia as one of the food we serve whenever we have a gathering. It looks delicious and so tempting. It is expensive here for a Tilapia but it is worth it. It tastes good with soy sauce and rice. We fry it and sometimes grill it. We can buy Tilapia at the ranch market and they will fry it for you. It is cheaper there. So I can only eat Tilapia if I am with friends and it feels like I am in Philippines. Hubby doesn't like much fish especially their head with their eyes open. As if they are pleading him not to eat them with their eyes staring back at him. He eats but only without the head. But we filipinos mostly like to munch on the crunchy part of the head. Even if it is a Tilapia. I like it now compared before. I am used to it already.
