Asparagus Pasta Primavera

I took this recipe from the Taste of Home cook book. Another recipe for your left-over ham. We did have some Ham from last Easter sunday and we haven't eaten it all. Instead of throwing it away, I made an Asparagus Pasta Primavera with it. The herb blended well with asparagus, ham, mushrooms and plum tomatoes. It was delicious and my husband liked it. Spinach linguine or fettuccine could also be used.
Ingredients:
6 tablespoons butter, cubed
3 tablespoons olive oil
8 garlic cloves, minced
1-1/2 pounds fresh asparagus, trimmed and cut into 1-inch pieces
1-1/2 cups sliced fresh mushrooms
1/2 cup chopped fully cooked ham
2 tablespoons each chopped fresh basil, oregano and rosemary
4 large plum tomatoes, chopped
1 teaspoon salt
1/4 teaspoon pepper
12 ounces uncooked linguine
1/2 cup shredded Parmesan cheese

Directions:
In a large skillet, melt butter with oil over medium heat. Add garlic; cook and stir for 3 minutes. Stir in the asparagus. Cover and cook for 1 minute. Add the mushrooms, ham, basil, oregano and rosemary. Cover and cook for 5 minutes or until asparagus is crisp-tender, stirring occasionally.
Stir in the tomatoes, salt and pepper. Cook 3 minutes longer or until heated through.
Meanwhile, cook linguine according to package directions; drain and place in a large bowl. Add asparagus mixture and toss. Sprinkle with Parmesan cheese. Yield: 6-8 servings.

Vanilla Cake With Frosting

It is spring time already and the weather is indeed beautiful! It is my favorite season of the year. No wonder I like decorating flowers on cake. It is a simple cake I made for a friend's birthday. The baking was easy and quick because I used the vanilla cake mix and just added the additional ingredients such as eggs, oil and water. Then I covered it with vanilla frosting and sprinkled some sprinkles to make it attractive. I couldn't think of a design to put on a cake. Since it is spring already, I just formed flowers with the sprinkles. It is better than having a cake with only white frosting on top and nothing else. Enjoy spring!

Beef BBQ Short Ribs

I haven't tried Beef with BBQ sauce before. I never thought that it would taste the same like pork BBQ. My husband ordered beef BBQ short ribs one night at a Japanese restaurant here in bakersfield. I like the place and the ambiance too. We couldn't tell it from the outside because it looks smaller but t'was OK inside. So we tried the beef BBQ and we liked it. The taste is the same with Filipino Pork BBQ. It is not the usual BBQ sauce that you put on pork meat. I think they use soda for the marinate because that's what we use to add sweetness to the meat. It is beef BBQ but tastes like Pork BBQ. I will try it someday using the pork BBQ recipe.

Jollibee's Spaghetti

It took me two years after to have a taste of my favorite Jollibee spaghetti. I almost forgot the taste of it. I like the sweet and tasty sauce. I tried making it before. Instead of using Italian sauce, I used the Filipino style in sweet sauce. I added Filipino sausages and it was good. The ingredients can be bought at any Filipino or Asian store. But still I want to eat Jollibee's pasta. It is the best for me. Please check my Sweet-Style Spaghetti recipe.

Sardines and Bean Thread

This is one of my favorite Filipino dishes that Mom used to prepare. Since a can of sardines (tinapa) was cheaper we always had this before aside from frying the sardines with eggs and onions. Actually, the sardines were cooked with "misua" or "odong." Misua is similar to bean threads but softer. Odong is yellow in color and just like the chow mein noodle but thinner. Since I can't find any misua or odong here, I used bean thread and it tasted the same. Felt like I was eating my Mom's cooking. I made it during my birthday celebration at a friend's house. We always love to have Filipino dishes every occasion.

Nanay was enjoying it (A friend's mother)
1 can sardines (6 0z or more)
4 oz bean thread (about 3 small bundles), soaked in lukewarm water (15 min)
1 medium onion, chopped
1 medium tomatoes
3 cloves garlic
1 tbsp cooking oil
1 red pepper, jullienned

salt and pepper
1 quart water(4 cups)
This is easy to cook. Saute garlic first on cooking oil then add onion, red pepper and tomatoes. Stir and cooked until vegetables are tender-crisp. Add the sardines and stir. Heat for 1-2 minutes. Then add water, add more or less if necessary. Bring to a boil. Add bean thread (drained) and cooked for a few minutes till tender. Add salt and pepper to taste. Serve hot with rice.

Lap Band Surgery?

By looking at my blog, you can tell that I love to eat a lot. Yes! I do especially Filipino food with lots of rice. Obviously, I am getting big now compared before. I gained weight tremendously since I arrived here in US. They say that I don't need to worry because we can have a surgery here in order to lose weight. Honestly, I am scared of it. I have seen a lot of people tried it. It is safe though but I am not sure if I could ever try it in my life. It is the easier means of getting rid of fats and we can't avoid ourselves thinking that it might cause harm. If I become really big and will decide to try it, I might try JourneyLite. Pasta Alfredo With Sausage

This is a homemade and new recipe for pasta alfredo. I used spiral pasta and instead of using chicken or meat, I used hot links or spicy sausage. It tasted really good because of the spicyness. I made this during my birthday celebration at a friend's house. They liked it so much and I am cooking this again. I used 2 bottles of RAGU alfredo sauce and a small pack of pasta (about 12 oz). I had used 4 links and sliced it 1/2-inch thick. Fried it without oil and drained (got rid of the oil) while preparing the pasta. I cooked the pasta according to its package directions. Then I put back the sausage to the skillet and added the sauce. Mixed it well and simmer till heated through. Then I added the mixture to the cooked pasta (drained). Garnished with bacon bits. Try it too, I am sure you will like it.

So I decided to go over the yellow pages of our directory book instead of searching online. I could have tried AAfter Web Search Engine to look for it. I better try that too. These are only a few of the benefits and features of AAfter. If ever I will search something again on the web, I will use this search engine. I may use this to search for similar recipes for my blog.

Deep-Pit Pig

Last Easter Sunday, we went to Sharon's parents' place to celebrate Easter and her son's birthday. There were a lot of food and everybody was having fun. Guests came and brought their favorite dishes. Sharon's parents cooked a whole pig in a deep pit. The head, feet, inside organs and skin were taken out. They put some onions and other vegetables and seasonings inside the pig to make it tasty. Then they wrapped it with lots of aluminum foil and tied it with tie wires. It was placed then in a deep pit with coal all around it and covered it with metal sheet. They placed it around 3 am and took it out around 3 pm. It took around 12 hours to cook it. The taste was just like the Filipino Lechon (roasted pig). I do like lechon better though because of its tasty skin.

My husband and I don't have a baby yet but we are trying to have one. It is alright if we can't have one knowing that our economy right now is so tough. If we are having, it would be difficult for sure to prioritize all of the needs for baby’s arrival. Then, we will try our best to cope up with time's problems. Law-uy

We Bisayans call this dish as Law-uy. It is just like the stewed meat with vegetables. It can be cooked using the crock pot or the stove top. My Mom always cooked this before when I was in Philippines. This is how it is prepared here. It has the following ingredients:
Pork Meat
noodles (canton and bean thread)
mixed vegetables (in cans or frozen mixed vege)
lemon grass (check your nearest filipino/asian stores)
greens (bok choy, pechay, spinach or kangkong)
chicken or pork bouillon cube
pepper
onion
water or broth
Boil the meat first until tender. Add meat broth if necessary then add the noodles (soak bean thread in lukewarm water for 15 min before cooking), vegetables, bouillon cube, lemon grass, onion and pepper if desired. Simmer till cooked then add pechay or any greens. It may be kept in a crock pot to keep it warm when served.

Penne with Hearty Meat Sauce

This is another quick and tasty recipe that you will love. Try this hearty Italian sausage crumbles in a rich tomato sauce over penne pasta. No other meat is required. Hunt's meat sauce tastes good with the italian sausage which add adds more taste to the sauce. Your family will surely like this. I bought this can of sauce (with the recipe printed on it) and the penne pasta for only 99cents on sale at Vons. A very cheap but delicious meal.

Hands On: 20 minutes
Total: 25 minutes
Makes: 6 servings (1-1/4 cups each)

Ingredients
8 ounces dry penne pasta
1-1/4 pounds Italian pork sausage links, casings removed
1 can (26.5 oz each) Hunt's Original Style Meat Flavor Spaghetti Sauce
1 can (6 oz each) Hunt's Tomato Paste
1/2 cup hot water
2 tablespoons shredded Parmesan cheese

Directions
Prepare pasta according to package directions; drain. Cook sausage in large skillet over medium heat until browned and crumbled; drain.
Add spaghetti sauce, tomato paste and water to meat. Add pasta; stir until well coated.
Bring to boil. Reduce heat; simmer over low heat 10 minutes or until heated through. Sprinkle with cheese.

I was planning to change my website layout with a different theme but until now, I haven't. I was too busy with work that is why I wasn't able to do it. I want it to be like that of the Wordpress cm theme at wpremix.com. The site will let you get some features and stats information. It is a well-established and trusted market leader in this industry. Outback Steakhouse's Coconut Shrimp

I love this coconut shrimp from Outback Steakhouse. I have been longing to know how it is cooked because my husband loves it too. So I checked the copycat recipe for this and found it out. I would love to make my own. This really makes me drool so it is a perfect appetizer for me. Try it too.

1 1/2 lb large raw shrimp
1/2 cup all−purpose flour
1/2 cup cornstarch
1 Tbl. salt
1/2 Tbl. white pepper
2 Tbl. vegetable oil
1 cup ice water
oil for deep frying
2 cups short shredded coconut
1/2 cup orange marmalade
1/4 cup Grey Poupon country mustard
1/4 cup honey
3−4 drops Tabasco sauce

Peel, devein & wash shrimp. Dry well on paper towels. Set aside.
In a bowl, mix all dry ingredients for batter. Add 2T oil & ice water.
Stir to blend. To fry: heat oil to 350 in deep fryer or electric
skillet. Spread coconut on a flat pan a little at a time, adding
more as needed. Dip shrimp in batter, then roll in coconut.
Fry in hot oil until lightly browned, about 4 minutes.
Bake at 300 5 minutes to finish cooking of the shrimp.
Serve with sweet & sour sauce or the following sauce: Combine
marmalade, Grey Poupon mustard, honey & Tabasco sauce to taste.

Beef Fajitas

You Will Need
1 pkg. McCormick® Fajita Seasoning Mix
2 tbsp. oil, divided
1 lb. boneless skinless chicken breasts or boneless beef sirloin, cut into ½-inch strips
1 medium onion, cut into thin strips
1 medium bell pepper, cut into thin strips
1/4 cup water
8 flour tortillas (6-inch)
Assorted Toppings: Shredded Cheese, Salsa, Sour Cream, Guacamole or Sliced Tomatoes

HEAT 1 tablespoon of oil in large skillet on medium-high heat. Add meat; cook and stir 3 minutes or until no longer pink. Remove from skillet. In same skillet, heat remaining 1 tablespoon oil. Add onion and bell pepper; cook and stir 3 to 5 minutes. Return meat to skillet.

STIR in water and Seasoning Mix. Cook and stir 3 minutes or until heated through.

SPOON into warm tortillas. Serve with toppings, if desired.

Customized Checks

My husband opened a new checking account for us not too long ago and the check was in my name. When I received my stubs of checks, I had wished that I had a customized design. I saw some of our clients that have their own designs and I liked it. I always complimented their checks and told them that I would want mine to be like theirs. They said that I can do it too. I told my husband about it. So if I have used all my checks already, I will try to have customized checks of my own. These personalized checks will create a professional and organized feel when used. Mama Sita's ChopSuey Mix

I love using Mama Sita's seasoning mix especially the stir-fry mix (Chopsuey/Pancit Canton). It is a powdered preparation that brings out the Asian flavor to a variety of stir fried dishes. Steak Burrito

This is my Steak Burrito. A quick and easy dish for your leftover meat. We had steak the other night and some leftovers the next day. So what I did, I prepared it for the burrito. I had spanish rice, cooked according to the package directions, tortillas and rosarita's refried beans which tastes good and ready to eat.

I heated the tortillas while cooking the spanish rice. I just added diced tomatoes to it. Then, while heating the tortillas, I heated the steak(in strips) and refried beans too. Then I put everthing on the tortilla, garnished with tortilla chip salsa.
