Humba

For me, my dad's Humba recipe is the best. I tried a lot of recipes but I got used with my dad's since I grew up with it. We always have humba everytime there is an occasion like birthdays and fiestas. It is a dish of pork meat with its fat and skin which Filipinos love. My dad chops the pork meat in bite-size cubes and boil it with water with salt, soy sauce, sugar or pineapple juice, and ground black pepper in it. The amount of the ingredients is just enough for the meat to taste good. My dad doesn't use exact measurements, he just puts everything in the saucepan and just tastes it and adds more ingredients if he can't get the desired taste. Boiling the meat in medium-heat will cook the dish. Add more water if it dries up.

Maha Blanca/Corn Pudding

This is one of my maha blanca recipes. I kept on adjusting the ingredients till I get the right texture and sweetness. I love this one! My friends here including the Americans love my maha blanca so every party sometimes, I make a tray for everybody to share. Below yields 2 trays.

2 condensed milk

1 evaporated milk
2 cups cornstarch
2 cans corn kernel
4 cans coconut milk

Procedure

In a medium saucepan, mix coconut milk, evaporated milk, sugar, cornstarch, and corn kernel. Boil over slow heat, stirring constantly to prevent lumps, until mixture is clear for about 3-5 minutes.Pour hot mixture into prepared dish and allow to set. You may also sprinkle grated cheese and crushed peanuts. Cool before slicing.

Fried Fish


This is another easy dish to prepare during parties. For Filipinos, fish is expected on the dinner or buffet table. It could be grilled, baked or fried. Either way of cooking, we love it. Especially if prepared with a mixture of soy sauce or fish sauce and vinegar with tomatoes, onions or green onions and lemons. Thinking of it makes me drool!

Steak

When celebrating a friend's birthday, we always prepare a pot luck for everybody who's attending the party. Sometimes, I can't think of a dish to cook. I am having a baby and it would be too difficult for me to really move around and take time to cook. So preparing a steak is the easiest for me. I could ask hubby to grill it while I marinate it with seasoned salt or soy sauce with peppers and spices beforehand. I'll just sautee bell peppers of different colors for the garnishing and it will be ready for any party. "Have some luck from my Pot."

Asparagus and String Beans Stir-Fry

I have posted separate recipes for string beans and asparagus before and now, I have both vegetables in one recipe. All has the same method and recipe applied. Aside from the two vegetables, I added okra too which is also my favorite. Try this healthy recipe and eat it with rice or just the vegetables alone. You will surely like it. Pork Asparagus

Asparagus is one of my favorite vegetables to cook. Aside from baking or boiling it, I like cooking it with pork meat. I cook it the same way I cook the other vegetables with meat. If you remember how I cook the string beans, the same method and recipe applies. You need garlic, onion, tomatoes, pork meat cubes and the asparagus. You may add a pork bouillon if available. I like using a bouillon cube instead of soy sauce but I haven't seen a pork bouillon yet in stores. So soy sauce or a bit of salt and pepper will work and a cup or 2 of water for the sauce. This would be perfect with rice. When cooking, I sautee first the garlic, onion, tomatoes on hot oil then stir-fry the meat. Add water, asparagus and cook till tender. You may cover the wok. Add soy sauce or bouillon or salt and pepper to taste. Serve with rice while hot.
