Craving for seafood? If you feel like eating seashells and shrimp, you might want to try this easy and quick recipe by my friend, Flora. She always cooks delicious food every time we visit her house. This is one of her dishes that we really like. You can buy seafood pack at any asian restaurant. If you can't, just get it from any of your local grocery store. You will buy the seashells and shrimp separately though. When cooking, you can cook it in many ways. The way Flora prepared it is by sauteeing garlic, onion and tomatoes first. Then the seafood was added with a bit of water. Just add salt and pepper to taste. You may also cook it with oyster sauce which I also like. The seafood will make its own juice and you may just use that instead of adding water. Either way is delicious. Just cook it the way you like it. Have fun cooking!

It was Gemma's birthday celebration when I first visited Marie callender's. The place was nice but the service at that time wasn't good. We even ended up serving ourselves. Our waitress was pregnant and she kept messing up with our orders. Most of us ordered the grilled Mahi-Mahi which was really delicious. We ordered extra rice because of that but the extra rice was not served right away. So it felt like, you were forced to stop because you don't have anything to eat with the fish. I was supposed to have one extra rice but I changed my mind. I lost my appetite. We understood about the waitress situation but with her service, we were not really satisfied. Anyway, the food was great especially the pie. It was a fun night with my Filipino friends, nice dinner and a good fellowship after.

I was craving for Jollibee spaghetti. Jollibee is a popular burger fastfood chain in Philippines. Unfortunately, we don't have Jollibee here in town. I checked my pantry and just found a jar of Italian sauce which I really don't like. It's sour for me and I want the sweet-style sauce. I remember how my mom cooks spaghetti. She will mix ketchup, spaghetti sauce and condensed milk to the meat. So I grabbed a bottle of ketchup and a can of condensed milk. Not only that, I also prepared sliced italian sausage as a substitute for filipino hotdogs. The sausage here is not that bad. I like it too. I cooked the ground beef(about a lb) with minced garlic, onion, and bell pepper. I then added the italian sauce (emptied the jar). Let it boil and added a bit of ketchup and condensed milk. I like it sweet so I used half of the can. The sausage was then added and I let it simmer for a bit. The pasta was cooked according to package direction. After that, the pasta was topped with my own filipino-style spaghetti and parmesan cheese. It wasn't bad at all. Taste like jollibee!

This is Flora's another recipe. I tell you, this is really good! One of Filipino's favorite dishes, paksiw. But this one has coconut milk. Paksiw is a dish with garlic, ginger (crushed or chopped) bay leaves, soy sauce and vinegar and simmered til cooked. You can make fish, chicken or pork paksiw with the same other ingredients. You can also add vegetables like sliced eggplants, ampalaya (bitter melon) and okra. The latter makes it slimy though. Usually we just add eggplant. Adding coconut milk makes it tastier. It's easy, you just have to mix all ingredients, usually the soy sauce is 1/2 the amount of the vinegar. If it is too sour or salty, just add a bit of water. Use medium heat at first then simmer. When your paksiw is almost done, add the coconut milk and let it boil. Don't overcook coco milk because it will smell. You may add salt and pepper to get the desired taste. Serve it with hot cooked rice. Try it!

I learned this recipe from a good friend, Flora. She always makes this for dinner and we have tried it. It was good so I would like to share this recipe with you guys. It's quick and easy. It's another way of cooking your potatoes and ground beef. It's actually similar to picadillo, only that the potatoes are mashed and cooked separately before baking. The amount of ingredients depend on the amount of serving you want to serve. She doesn't have the exact measurement but we know how much we need to prepare if we are used to cooking. So enjoy!
medium potatoes, about 8 or more, boiled and mashed
1-2 lbs ground beef
onion, chopped finely
bell pepper, chopped finely
salt and pepper to taste
shredded cheddar cheese
Cook beef. You may drain it. Saute vegetables then add the cooked ground beef. You may also saute the vegetables first before cooking the ground beef. You just add the latter and wait til no pink remains or cooked.
Heat oven 350 deg. Prepare a baking dish. Scoop out mashed potatoes and put it in the baking dish in layers. Potatoes first then the cooked ground beef. Top it again with the mashed potatoes, followed by the ground beef and so on. Garnish it with shredded cheddar cheese and bake. When cheese is melted, it's done. Enjoy it with steak or any other cooked meat and vegetables.
