This is the first time that I tried cooking mung beans/munggos with Coco Milk. It turned out good and addicting too! I soaked half of the mung beans pack in water over night and simmered it till tender the next day. We have plenty of left-over ham so I made cubes of it and added a lot to the mung beans. I added 1 can of coco milk (about 1 1/2 cups) then just let it boil before adding flavor. As for the seasoning, I only used half of the pork bouillon cube. Then when done, I added plenty of spinach, my favorite! Served it on top of steam rice.
