This is my first time to try cooking chicken curry. Actually, I was just helping a friend preparing this and it came out really good. Yolly was not used to make curry using curry paste, so I was helping her with it. We just read the directions on the back label of the curry paste pack which is for Chicken Curry recipe. She was using only a pack of coconut milk but I read that it should be 2 packs which is equivalent to 4 cups of coconut milk mixed with the paste. So the ingredients are: chicken parts, potatoes, bell peppers, onions, coconut milk and the curry paste. The chicken meat was cooked first and the potatoes were cooked separately as well as the curry sauce. The vegetables were fried separately and mixed to the meat after everything was cooked. The sauce was made of the coco milk and curry paste, cooked separately till blended well. Then the curry sauce was added to the meat pot and was mixed, stirred thoroughly. It was then served and eaten with right. Yum!
